Figs with ham and cheese, Higos con jamon y queso

Ingredients 

8 Figs
4 slices of serrano ham
Blue cheese or stilton
Balsamic vinegar

Preparation 

Cut the top of the figs
and cut and x in the middle
roll the ham around the cheese and insert in the x
Bake in an oven tray for 8 minutes

While cooking reduce vinegar
in a frying pan stir slowly with a spatula
until it becomes sirup

Take figs out of the oven and decorate with the vinagre

Tarta de Santiago, Santiago Cake



Ingredients 
250g sugar
250g ground almonds
4 big eggs
1 teaspoon cinnamon
Zest of a lemon
Icing sugar for decoration



Mix sugar and almonds with the cinnamon and lemon zest.
Stir the eggs in one at a time until smooth, using a spatula to avoid getting air into the mix
Spoon the mix into a pre-buttered flan dish

Cooking 
45 mins in a pre-heated oven at 180 degrees
test with a skewer and if it comes out clean it means it is ready

Leave to cool and sprinkle icing sugar over a stencil of your choice
